At age 18, Chef Somura started his career as chef at Hotel Okura, one of the leading luxury hotels in metropolitan Tokyo. At age 23, he was appointed as an official chef at the Japanese ambassador's residence in Brussels. He then travelled and worked at several famous restaurants in Europe and South-east Asia. After coming back to Tokyo, he was appointed as an executive chef at the sumptuous restaurant in Tokyo, where international business people gathered for socializing everyday. At age 34, he opened "A ta gueule".

"A ta gueule" is a French word. The direct translation is "Shut up!" but it can be translated into "your favorite tongue ". There was a French restaurant named "A ta gueule" at the same place more than 20 years ago and the chef moved the restaurant to the new place with different name. The name, A ta gueule, was originally decided by the landlady who taught French language to Chef Somura when he worked at Hotel Okura. As he knew she had a special feeing in this name, he decided to name his first restaurant "A ta gueule". |
